We've been working on the cookbook to our Soho restaurant Ducksoup - it's a celebration of some of our favourite recipes from our weekly changing menu. We cook simply, following the seasons and using the best flavours the seasons has to offer. When you cook this way, its easy to keep things simple. And then its just the addition of a few little extras here and there to bring things together; the squeeze of a burnt lemon, some freshly torn marjoram, a spoonful of labneh or a handful of toasted nuts.
